Chocolate Chip Banana Bread

This banana bread recipe was a perfect balance of tastes, the banana was not too overpowering and the chocolate chips were a good surprise in each bite.  The texture of it was also very smooth and moist.  Just be careful when taking it out of the loaf pan because the top is fragile.  It would be super awesome with some homemade vanilla ice cream!



Zucchini Roll Ups



**Serves 5 (side portions)**


1 Zucchinni

1 Tbsp Mayo (Follow this link for a mayo recipe! <>

1 Tbsp Curry Powder

1 Can of Tuna


Mix the mayo, curry powder, and tuna in a bowl together.  Add more of each until you reach the taste or consistency you desire.

Use a slicer to slice the zucchini (hotdog way) into flat and long slices.

Put some of the mixture on each zucchini slice and roll it up!

I added vanilla protein powder to the recipe and they turned out super super moist and tasty, they did not need any syrup! So yum!


Baked Pears


**Serves 2**

I topped the pears with 1/4 Cup Crushed Pecans, 1 Tbsp Honey, 1 Tsp Coconut Oil, a few raisins and a sprinkle of cinnnamon

Paleo Mayonnaise


**Makes 16oz**

Chicken Avocado Salad


**It makes enough spread for 6 little homemade buns**

**Serves 2 People**


1/2 Cup Chicken (boiled till cooked and diced)

1/2 Avocado (mashed up)

1 Celery Stick (diced into small pieces)

1-2 Tbsp Sriracha Sauce (depending on how spicy you want it)

1-2 Tbsp Homemade Paleo Mayo (optional but it adds more texture and a slight hint of flavor)


Combine everything together in a medium bowl and mix well until combined!

Spread on top of anything (bread, cucumbers, tomatoes, etc.) or enjoy it by itself


Collard Green Breakfast Burrito

6 Collard Green Leaves

4 Slices Bacon (Chopped up)

2 Eggs

1/2 Cup Leeks (Chopped up)

1/2 Cup Quinoa (Cooked)

Coconut Oil (For cooking)


Prepare the collard green leaves by washing them and cutting the stem in half and as flat as possible.  Then bring a pan of water to a temperature right under boiling and dip the leaves into it until they get a little more tender

Prepare the burrito scramble by cooking the bacon, then adding in the other ingredients and cook until mixed and hot

Assemble the collard wraps by lining 2 next to each other (facing the opposite direction of each other) and put some of the scramble into the middle.  Then roll the wrap up by folding in the sides and tucking in at the same time. (Its hard and takes practice to get a nice wrap)
