Banana Chocolate Chip Pankcakes

**Super light and fluffy**

=Makes 2 Servings or about 8 small pancakes=


3 Eggs (at room temperature)

1/4 Cup Coconut Milk

1 Tsp Vanilla

1 Tsp Honey

2 Tbsp Coconut Flour

1/3 Almond Flour

1/2 Tsp Baking Soda

1/4 Tsp Salt

1 Ripe Banana

1/4 Chocolate Chips

Coconut Oil for Frying


Mix the wet ingredients together (Eggs, Coconut Milk, Vanilla, Honey, and Banana) with beater until slightly foamy

Combine the dry ingredients together in a separate bowl and then incorporate them into the wet ingredients

Whisk or beat the mixture until combined and let sit for 3-5 minutes to let the moisture absorb

Heat a pan with coconut oil and make pancakes about 4 inches or less so that they are easier to flip

Flip when they start to bubble

Enjoy with some fresh fruit and 100% Maple Syrup
