Coconutty Chicken Katsu

**If you love chicken and love coconut, you will love this recipe**

**This can be made fried or baked**

=Serves 1=

Ingredients~

1 Chicken Breast

About 3 Tbsp Coconut Flour (enough to coat the chicken pieces)

1 Egg

About 6 Tbsp Coconut Shreds (enough to coat the chicen pieces)

Coconut Oil (If you choose to fry the chicken katsu)

Directions For Baking~

Preheat oven to 350 degrees

Prepare the coconut flour, egg, and coconut shreds by…

-crack the egg into a bowl and scramble it

-put the coconut flour and coconut shreds into different bowls

Cut the chicken breast into strips, I usually slice it thinner so that it cooks faster. [you could keep the chicken breast uncut too, but it will need longer cooking time]

Roll the chicken in coconut flour until coated

Dip the chicken into the scrambled egg until coated

Roll the chicken into the coconut shreds until coated

Put prepared chicken onto parchment paper

Bake until the chicken is cooked, about 20 minutes for thin strips but it depends on the size of the strips

Roll the chicken breast in coconut flour until coated

Dip the chicken breast into the scrambled egg until coated

Roll the chicken breast into the coconut shreds until coated

Heat coconut oil in a medium sized pan

Fry coated chicken breast, flip over when the bottom is browned and cover for a few minutes until the chicken is cooked through

Placed on a drying rack or paper towels to absorb the excess oil
