Mini Pumpkin & Curry Chicken Patties

=I doubled this recipe and it made more than enough for 10 people.  I even froze the leftovers!=


1.5 lbs Ground Chicken

1/4 Cup Canned Pureed Pumpkin

1 Cup Almond Flour

2-3 Tbsp Curry Powder

1 Tsp Garlic Powder

1 Tsp Onion Powder

1/2 Tsp Salt

1/4 Tsp Black Pepper

1-2 Tbsp Coconut Oil


Add everything in a bowl, except coconut oil, and mix until combined.

Heat up coconut oil in medium sized pan.

Use your hands to shape the mixture into either balls, sliders, patties, or whatever you want!

When the bottom of the patty is browned, flip it and cover the pan for a few minutes until it cooks through.

Set it on a drying rack or paper towels to get the extra oil off of them, unless you prefer them more oily.
