Chicken Avocado Salad

**It makes enough spread for 6 little homemade buns**

**Serves 2 People**

Ingredients:

1/2 Cup Chicken (boiled till cooked and diced)

1/2 Avocado (mashed up)

1 Celery Stick (diced into small pieces)

1-2 Tbsp Sriracha Sauce (depending on how spicy you want it)

1-2 Tbsp Homemade Paleo Mayo (optional but it adds more texture and a slight hint of flavor)

Directions:

Combine everything together in a medium bowl and mix well until combined!

Spread on top of anything (bread, cucumbers, tomatoes, etc.) or enjoy it by itself

Enjoy!!

Chocolate Shell Banana Ice Cream

=Serves 2=

Ingredients (for the ice cream)~

2 Bananas (frozen)

1/2 Avocado

1 Tbsp Almond Butter

Directions (for the ice cream)~

Put the frozen bananas into a food processor and pulse until chopped up

Add in the avocado and pulse until creamy

Add in the almond butter and pulse until creamier

Ingredients (for the Chocolate Shell)~

1 Tbsp Coconut Oil

1 Tbsp Chocolate Chips (dark and organic is always good)

Directions (for the Chocolate Shell)~

Melt the coconut oil and chocolate chips in a small pan over medium heat

Pour over the ice cream

Put in the freezer for a couple minutes until a shell is formed

Parmesan Olive Lettuce Wrap

**A perfect & quick snack**

=Makes 2 Lettuce Wraps=

Ingredients~

2 Leaves from a Romain Lettuce Bunch (Earthbound Organics Packaged Romain is the best for lettuce wraps)

4 Kalamata Olives (Cut in half)

Sprinkle of Parmesan Cheese

Directions~

Wash off the leaves and dry

Put cut kalamata olives on the leaves and sprinkle cheese over them

Enjoy!!

Orange NOT Apple Sauce

=3 Mandarin Oranges makes 2 servings, about a cup=

Ingredients~

Oranges or Mandarin Oranges

Honey

Cinnamon

Directions~

Put some oranges, a squeeze of honey (to your taste), and cinnamon (to your taste) in a food processor and pulse until you reach the desired texture.

Crunchy Yogurt

=Makes about 1.5 Cups=

Ingredients~

1 Cup Greek Yogurt (I use Fage since it has 23g Protein per cup! Costco sells it for cheap)

14 Almonds

1/2 Cup – 1 Cup of Fruit of your Choice

Sprinkle of Cinnamon

Squeeze of Honey

Directions~

Put all ingredients into food processor until mixed well.

Enjoy!!
